If replacement is not an option - then research the door change option. How much counter space do you need, what appliances. Convenient placement of dishes, spices, pots, bulk products. How many cooks/ standing around friends at one time. Then plan the kitchen for yourself, think on how do you want the space work. If you opt for a complete remodel - do remove the soffits, if there is a plumbing inside you can almost always reduce them to 6' deep and tall, so you can hide them inside of the modified cabinets. You will be living there, so be happy with it and don't buckle to 'trends' or 'resale value'. you'll get as many opinions as there are rays of sunshine on a sunny day. And paint is a less expensive fix if you decide you've goofed on the color. Are you a person who likes color or do you prefer neutrals? Only you can decide that! Remember, paint colors change with the light. You can have bath tubs and sinks refinished, so if you hate the green, that might be a good investment. If your current appliances work, why not leave them alone for a year or two and see how you like the layout. Personally, I dislike stainless steel appliances, so I am not one to ever suggest them. You might want to look into engineered hardwood flooring. It's a royal pain to move furniture out in order to later do the floors.
